In Kurzform: Ich kaufe Obst und Gemüse - danach wird dieses vom "Vegetable Butcher" sauber geputzt. Ich bekomme als Kunde dann 2 Beutel: 1 Beutel geputzte Ware und ein Beutel"Abfall". Beides wird gewogen und berechnet und dann wird die Kompostierung des Beutels mit "Abfall" garantiert. Na, wenn das keine Nachhaltigkeit ist und morgen auch Trend in Deutschland sein kann?

We recently wrote about the vegetable world’s ascendancy thanks to an upcoming auction at Sotheby’s featuring local and heirloom varieties to celebrate New York’s Eat Drink Local Week, and now it appears they’re going to be receiving the same level of treatment as a cut of meat. When new NYC market Eataly opens August 31st, among its multiple floors of meat,fish, cheeses and other Italian specialties, most with accompanying dining areas, customers will have the option of speaking to a vegetable butcher.

Here customers looking for insight into how to prepare an artichoke, the best way to cook a delicata squash or who simply don’t have time to prep their produce before they get home, will be able to take advantage of the free service while they shop. And to make sure no one walks away without paying full price for the freshly cleaned and peeled carrots or cucumbers, all customers are given their vegetable trimmings in a separate bag for weighing at check out, at which point the store will take care of composting.

The marketplace is modeled after the original location in Turin, Italy and is being developed by restauranteurs Joseph Bastianich and Mario Batali.
